发明名称 FAT AND OIL COMPOSITION FOR IMPROVING WHEAT FLOUR DOUGH
摘要 PURPOSE:To provide a fat and oil composition having improved wheat flour- improving function by mixing fats, oils and an emulsifier with a powder comprising yeast cell dry powder and protease. CONSTITUTION:The subject fat and oil composition is composed of (A) a solid powder comprising yeast cell dry powder and a protease, (B) fats and oils and (C) an emulsifier. The used yeast includes yeasts belonging to the genus Saccharomyces such as bread yeast, beer yeast, wine yeast or sake yeast. The yeast can be dried by a drying method generally used for processing foods, such as a spray-drying method. Although any of commercially available proteases may be used as the used protease, ones having high stability when used at a pH of 5.0-10.0 and at a temperature of 20-50 deg.C can be readily employed. Enzymes such as papain activated with a compound such as reduced glutathione is also suitably used.
