PURPOSE:To provide an edible oil composition, excellent in digestibility without any oiliness by using a specific amount for more of unsaturated fatty acid residues in glyceride constituent fatty acid residues and specifying the relative blending ratio of monoglycerides to diglycerides. CONSTITUTION:Fats and oils with a high content of unsaturated fatty acid residues are subjected to ester interchange reaction with glycerol. Thereby, an edible oil composition, having the weight ratio of diglycerides to monoglycerides is within the range of (5-990):1, containing the diglycerides in an amount within the range of 5-99wt.% based on the total amount of the oil, 8-24C fatty acid residues constituting the mono-, di- and triglycerides with the content of unsaturated fatty acid residues of >=70wt.% based on fatty acid residues, <=40wt.% content of diglycerides consisting of a combination of saturated/unsaturated fatty acids, <=5wt.% content of diglycerides consisting of a combination of the saturated/saturated fatty acids and the remainder consisting of a combination of the unsaturated/unsaturated fatty acids. |
