PURPOSE:To continuously cook a large amount of conger eel by dividing laterally conger eels, removing bones, then sliminess, roasting, attaching sauce to the conger eels, grilling, then beating, applying sauce to the conger eels and further packaging the conger eels in a sealed film. CONSTITUTION:Fresh conger eels 1 are divided laterally, internal organs are taken out and bone part 1a and small bones 1c are removed. Then the conger eels 1 are placed on a driving roller 6 as a forcedly movable device while laying the outer layer of the skin up and passed through a hot water shower chamber 7 to remove sliminess. Further, the conger eels from which sliminess is removed are successively sent to a roasting and cooling furnace 14a, roasted, coated with sauce 15 and grilled by a grilling and cooking furnace. Then, the conger eels are cooled, beaten by a tapping plate 16, further coated with the sauce 15 and packaged in a sealed film 11 to cook and process a large amount of conger eels continuously. |
