PURPOSE:To provide the title apparatus intended for easy pressurized treatment of food with warm heat or at specified temperatures below those corresponding to said heat, so designed that a pressure vessel is equipped with a circulator for pressing medium, a pressure controller and one or both of heater and chiller. CONSTITUTION:A treatment chamber 10 surrounded by a thermal insulating material 7 is provided within a pressure vessel 1 made up of a cylindrical side wall 2, a top cover 3 and bottom cover 4, and reservoirs 28, 32 for pressing medium and a circulating pump 30 are connected to passages 14, 15 provided on the bottom cover 4, thus forming a circulating system. Said reservoirs 28, 32 are equipped with a chiller 39 and heater 40, respectively. And a pressure regulator 17 is connected to a passage 13 provided on the bottom cover 4. |
