PURPOSE:To improve the operation efficiency, production efficiency, etc., by a process wherein oil or fat is rapidly cooled and mixed to form a plasticized oil or fat, which is filled in a container to adjust to a specified hardness and then fed to a food material mixing tank by means of a pump for delivering a high-viscosity substance. CONSTITUTION:Oil or fat, selected from animal and vegetable oils and fats, is rapidly cooled and mixed to give a plasticized oil or fat comprising a shortening or margarine preferably having an SFI of 10 to 35 at 20 deg.C and 5 to 20 at 30 deg.C. This plasticized oil or fat is filled in a container to adjust to a hardness (compression stress measured with a rheometer) of 0.5 to 4.0X10<2>dyne/cm<2> and then fed through a line to a food material mixing tank by means of a pump for delivering a high-viscosity substance, directly connected to the wall of said container. |
