摘要 PURPOSE:To provide the subject mixture containing corn flour composed mainly of powder of the corneous part of corn, giving a coating liquid having stable viscosity, enabling uniform application of bread crumb, developing excellent fried color of the coating layer, having soft palatability and suitable for the preparation of TEMPURA (deep fried fish and vegetables). CONSTITUTION:Corn is conditioned by soaking, treated with an embryo-removing machine to remove the embryo, crushed with a rolling machine and sieved with a 80 mesh sieve. Corn grits composed of corneous part of corn can be obtained by the sieving. The corn grits are crushed to obtain corn flour composed mainly of the powder of corneous part. The objective coating mixture is produced by using the corn flour as a main component.
