PURPOSE:To provide crabs with less commercial value such as TSUMEKURIGANI with the same color and taste as those of Erimacrus isenbeckii, to improve commercial value thereof and further to active local industry by boiling crabs with essence of fish and shellfish without depending upon chemicals. CONSTITUTION:For example, ground salt is dissolved in cleaned water from which residual chlorine is removed, boiled, then raw octopuses are boiled in the cleaned water to give soup of octopus essence. Then the soup is mixed with SAKE (rice wine) and water-soluble calcium powder to give a mixture, in which washed raw material crabs are boiled and the boiled crabs are washed with alkali ion water having dissolved ground salt and finished. |
