<p>A milk/mineral concentrate free from turbidity or precipitation can be prepared by filtering a milk serum, which is produced as the by-product of cheese manufacture and which has only very limited applications heretofor, through an ultrafiltration membrane having a fractionation molecular weight below forty thousand at a pH value of 4 to 6, concentrating the filtrate till the concentration of lactose in the filtrate reaches about 50 %, and leaving the concentrate to stand to thereby remove precipitated lactose. The milk/mineral concentrate thus obtained can be used as the additive for nutrition of various foods including drink, because it contains various minerals necessary for human bodies, such as sodium, potassium and calcium among others, in proper proportions.</p> |
