PRODUCTION OF GELLED MATERIAL

PURPOSE:To obtain a spherical or ellipsoidal gelled material resistant to the permeation of the core liquid through the gel membrane by coating a liquid or paste with a gel. CONSTITUTION:The objective gelled material is produced by coating a liquid or pasty material with a polymeric polysaccharide gel in a spherical or ellipsoidal form. The gelled material is preferably produced by adding an edible metal ion having >=2 valence (excluding Mg and Hg) to a liquid or pasty material and dropping the mixture into a sol containing a gelatinizable substance and a polymeric polysaccharide reactive with the metal.
