PURPOSE:To obtain the subject net consisting of a square frame made of an elastic material closely fittable to the inner circumference of a main mold and a metallic net having fine mesh opening and stretched on said frame, effective in performing easy, simple and hygienic molding and demolding of a bean curd and suitable for automation. CONSTITUTION:One of filter nets 3, 3 is pressed and fixed into a bottom plate in a conventional main mold and the other net is used by placing under the bottom plate of a pressing lid (b). In other word, a filter net 3 is placed in the main mold (a) in a state to contact the circumference of the frame 2 to the inner circumference of the main mold (a) and crushed bean curd used as a raw material is supplied from the main mold (a) to the latter net. Thereafter, the circumference of the frame 2 of the pressing lid (b) having the latter filter net 3 on the bottom is pressed into the inner circumference of the main mold (a). The crushed bean curd is pressed between the upper and lower filter nets 3, 3 to form a block of cotton-strained bean curd. The compression-molded bean curd is removed from the mold as it is by placing the main mold (a) on a table facing the top of the mold downward. |
