PURPOSE:To obtain dried SOBA (buckwheat noodles) having excellent flavor and capable of storing for a long period without using liaison by boiling long strips of noodle obtained by adding water to SOBA flour and kneading and drawing the mixture in boiled water and drying the long strips at low temperature using an air. CONSTITUTION:Water is added to SOBA (buckwheat noodles) flour and the mixture is kneaded and drawn and then formed in to long strips of noodle by an extruder, etc. The long strips is subjected to boiling treatment in boiled water for 5-6min to give boiled SOBA. The boiled SOBA is washed with water and freed from water and dried at low temperature using an air until the weight becomes <=30wt.% based on the boiled SOBA to provide the dried SOBA. |
