<p>PURPOSE:To maintain green of vegetable and to improve preservation performances by immersing vegetables in an aqueous solution containing salt and arginine. CONSTITUTION:Vegetables are immersed in an aqueous solution containing 0.2-5% salt, 0.1-1% arginine and optionally 0.1-3% potassium salt (e.g., potassium malate) containing a seasoning component and preserved at 1-5 deg.C in cold storage.</p> |
