The present invention relates to a method and an installation for drying a plant mass, comprising: - a closed drying enclosure 1, including lateral openings 3 to allow access to this enclosure; - at least one member 4 for supplying, distributing and treating air in the said enclosure; - a platform 2 serving as a support for the plant mass to be dried, located inside the said enclosure, characterised in that it further comprises a stirring member 5 located inside the enclosure, capable of being moved in all directions, and the action height of which is variable, the said stirring member being capable of being given a rotational movement whose speed is variable. <IMAGE>
