CONSTITUTION:A stable taste modifier produced by subjecting a fruit or dried fruit of Curculigo.latlfolia which is a plant belonging to the genus Curculigo of the family Amaryllidaceae and contains curculin to crushing, conversion into a paste, etc., or extracting the contained curculin with a saline solution, etc., and preparing a taste modifying substance containing the curculin as an active ingredient and then processing the taste modifier in a filmy or granular form. If a small amount of the taste modifier is placed on a tongue and licked and a food having acidity, etc., is then eaten, the following effects are obtained. Excellent sweetness is felt without any feeling of the acidity, etc. |
