PURPOSE:To obtain the title embryo with its shape retained, outstanding in flavor and preservability and giving crispy, uniform eating feel by adding water to the original embryo followed by heating in a high-temperature air stream under normal pressure to provide a swelling treatment. CONSTITUTION:Water is added to raw embryos generally ca.9-13wt.% in moisture content, comprising raw embryos of grains or beans such as wheat embryos or soybean embryos or defatted embryos therefrom to make a regulation so as to result in embryos 13.5-21wt.% in moisture content. The resultant embryos are aged, if needed, at 20-30 deg.C for 5-20min to carry out conditioning. Thence, the embryos thus treated are heated under normal pressure in a high-temperature air stream at 200-250 deg.C for 20-30sec to make a swelling treatment, thus obtaining the objective processed embryos. |
