PURPOSE:To obtain a food having the surface coated with a collagen dispersion without causing denaturation, elution, etc., of collagen in a drying step by kneading a specific amount of a smoking liquid into the collagen dispersion, directly and simultaneously extruding the kneaded mixture together with a food material. CONSTITUTION:Collagen obtained from oxhide, cowhide, pig hide, etc., is dispersed in water to provide a collagen dispersion and a smoking liquid in an amount of 10-100% based on the dried collagen weight is then added and homogeneously mixed therewith in a vacuum kneader, etc. The mixed dispersion, together with a food material (e.g., minced beef or ground fish meat), is then directly and simultaneously fed to an extruder and extruded to afford a food (e.g., sausage) having the surface coated with the collagen dispersion. The sufficiently dried state can be retained even after refrigeration without damaging casings of the resultant food due to thermal denaturation during a drying step and slimy stickiness after cooling. |
