The pneumatic cutting machine takes one or more cuts from the upper surface of the bread, and the slide unit involved describes a forwards and backwards movement over a transport track on which the bread is carried towards an oven. - The slide unit carries a raisable and lowerable cutting unit incorporating a motor which causes a cutter mechanism to rotate. During a first movement on the transport track, the cutter mechanism adopts a lowered position, taking a number of cuts from the top surface of the bread over which it passes. - During the return movement of the slide unit, the cutter mechanism is closer to it so that no cutting operation can take place. - The cutting mechanism is pref. located over the transport track in a position between a leavening track and an oven, describing a parallel movement in relation to the plane of the transport track inclined relatively to the track transversal direction. |
