The invention relates to a ventilation assembly, particularly for kitchens, for the purpose of extracting steam and grease in suspension in the air as well as smoke and vapours. It is characterised in that it comprises an additional propulsion chamber 30 connected to one of the parts which are a separate collector 31 and a duct 32 which, at one point upstream of its inlet comprises a means 33 of setting the temperature of the air and a means 34 of propelling the air to the additional chamber which has at its base a slot 35 extending over the entire length of the assembly. <IMAGE>
