PURPOSE:To obtain Chinese noodles capable of readily, precisely and efficiently ingesting dietary fibers in eating the Chinese noodles by adding bean-curd refuse as the dietary fibers to the Chinese noodles consisting of wheat flour and aqueous solution of potassium carbonate. CONSTITUTION:Hot air at 300 deg.C is blown on bean-curd refuse containing about 80% water to dry the bean-curd refuse to 10% moisture content. The dried bean-curd refuse is then sterilized and pulverized to about 120 mesh in particle diameter. Wheat flour in an amount of 80% is then blended with 10-4% above- mentioned pulverized bean-curd refuse, 1% common salt, aqueous solution of potassium carbonate, etc., in the amounts of prior art. Water is subsequently added and mixed with the aforementioned blend and kneaded to provide the form of dumplings. The resultant dumplings are extended into a beltlike form and further cut into strips to afford the objective Chinese noodles. |
