PURPOSE:To improve quality by treating wines with immobilized urease immobilized to specific carrier. CONSTITUTION:A part or all of amine group in chitosan obtained by subjecting chitin to alkali treatment is substituted with a group expressed by formula I (n is 2-10) and/or a group expressed by formula II to obtain immobilized carrier (A) as a chitosan derivative. Next, crosslinking agent such as glutaraldehyde in an amount of 1-10 times mol of free radical in A-component is added to A-component, treated and urease derived from microorganism such as acidic urease is added in an amount of 500-30000 U per 1g (weight in wet) of A-component, then immobilized by covalent bonding method, etc., to obtain immobilized urease (B) of porous particle having 0.1-0.5mm particle diameter. Next, a column (C) having 1:1-10 ratio of width and height is filled with about 8l B-component, wines such as refined SAKE is poured into the column in a pouring speed about SV>=5 and treated about 1kl in about 24 hour, thus wines containing <=1ppm urea is collected. |
