<p>The invention relates to a process of separating arabinose from juice sweatened with aldehyde-function saccharides. It essentially consists in adjusting the weighted hydratation rate of the hydrolysate to a value of less than about 30 % and preferably between 5 and 15 %, then producing a reactive hydro-organic medium by mixing said hydrolysate with a reactant consisting of at least one active methylene ketone compound, especially ethyl acetylate or methyl or acetylacetone, and a calcium-based catalyst (calcium chloride), and finally an alcohol (ethanol), agitating said hydro-organic medium to promote phase contact and facilitate a condensation reaction with the formation of furane polyols and extracting the arabinose from the reaction medium, especially by the addition of water to the medium, physically filtering the precipitated furane polyol and liquid/liquid extraction followed by chromatographic extraction of the arabinose from the liquid phase. The process makes it possible to obtain arabinose in pure form.</p> |
