<p>A process of improving the gelling properties of high-esterified pectin by reacting the pectin with polygalacturonase at a pH-value of 1-7 and at a temperature of 5-65°C in which the reaction is terminated before the average molecular weight of the pectin has been reduced to a value of 50 % of the average molecular weight of the starting material.</p> |
