PURPOSE:To produce a meat product heated and sterilized in the central part and retaining appearance, texture and taste characteristic of roast beef by heat-sterilizing a raw meat having added and dispersed red based pigment and discoloring only outside red part. CONSTITUTION:A red based synthetic or natural pigment and mixed pigment thereof having discoloring temperature higher than sterilization temperature of meat products and having properties capable of losing red on further heating is added to a raw meat and then the mixture is subjected to dumpling till uniformly dispersed into the raw meat mass. Then the central part of the above- mentioned raw meat mass is heat-sterilized in sterilization conditions specified according to the Food Sanitation Act and below discoloring temperature conditions of pigment to loss red color only in the outside part heated. |
