PURPOSE:To prepare cereals useful as a raw material of Japanese rice cracker having high nutrient value and excellent taste and flavor by growing an unhulled grain to a sprouted state or a state just before sprouting, drying the grain, mixing with albumen and adjusting the water-content of the mixture. CONSTITUTION:Threshed rice is left standing in unhulled state in a highly humid atmosphere and grown to sprouted state or a just before sprouting. The obtained grain is dried almost uniformly to the core as it is under sunshine or with far infrared radiation to a water-content of <=15%. The dried unhulled rice is hulled and the hulled rice is kneaded with albumen and adjusted to a water-content of 20-30%. |
