Mixed sucrose esters are prepared by condensing 1 mol. of natural triglyceride with at least 2 mols. of sucrose in dimethylformamide in the presence of potassium carbonate as a catalyst for 3 to 9 hours at 90-95 DEG C., and adding a further amount of triglyceride to bring the mol. ratio of triglyceride to unreacted sucrose to 1 :0.5, heating to 90-95 DEG C. for 3 to 9 hours and evaporating off the dimethyl formamide. The products comprise water-insoluble sugar glycerides of 10-30% combined sucrose content and water-soluble sugar (higher than 30% sucrose content) esters of fatty acids of 8-30 carbon atoms. Coconut and palm oils, land and ox tallow may be used as the glycerides.
