PURPOSE:To obtain a safe seasoning like MIRIN (sweet rice wine used as seasoning) resistant to the degradation of taste and flavor and having improved preservability by adding a factor having lethal action to yeast and produced by yeast of genus Hansenula or adding a (treated) cultured liquid containing said factor. CONSTITUTION:Proliferation of yeast is prevented and the preservability of the subject MIRIN-like seasoning is improved by adding and mixing a cultured liquid containing one or more kinds of factors having lethal action to yeast and produced by culturing a yeast of genus Hansenula (e.g., Hansenula mrakii IFO 0895), concentrated or pulverized product of said cultured liquid or the above factor separated from said cultured liquid preferably in the preparation of said seasoning. The preservability of the seasoning can be further improved by adding a liquid containing acetic acid (e.g., food vinegar) to prevent the proliferation of fungi and bacteria. |
