Starch complexes soluble in cold water are made by heating an aqueous suspension of starch at a temperature below 100‹ C. in the presence of at least one high M.W. colloidal ester of a polysaccharide represented by the formula wherein n denotes a high polymerization number and M E is Na, Ca, Mg or K, until the starch is dissolved, whereupon the resulting complex is recovered. In examples, cassava, maize and potato starches are treated with carragheen, optionally together with guar gum, and the reaction product is recovered by coagulation with a polar organic solvent, e.g. isopropanol or by spray- or drum-drying. Other colloids, coagulation solvents and recovery methods are disclosed.
