PURPOSE:To continuously provide TOFU (soybean curd) having small amounts of impurities and good taste by continuously disposing the respective processes for directly heating, extracting, aging and steaming sterilizing a soybean soup. CONSTITUTION:A soybean soup is heated from ordinary temperature to 85 deg.C in a heating tank 5 and further heated to 90 deg.C while the heating and non-heating of the soybean soup are repeated by the connection and disconnection of a heating source every 5-10min to extract and age the soybean soup. The soybean soup flown in a steaming tank 15 is heated until a time just before boiling while being stirred with a stirring blade 20 to steam and sterilize the soybean soup. Thus, impurities in the steam do not contaminate the soybean soup and the concentration of the soybean soup does not change as well. |
