PURPOSE:To improve the production efficiency of a highly unsaturated fatty acid having chain of odd carbon number at a low cost by culturing a microbial strain belonging to genus Mortierella and capable of producing a highly unsaturated fatty acid having chain of odd carbon number in a medium. CONSTITUTION:A microbial strain belonging to genus Mortierella such as Mortierella elongata 1FO 8570 is cultured in a medium containing 0.1-30wt.% of carbon source such as glucose and 0.01-5wt.% of nitrogen source such as peptone at 5-40 deg.C for 3-14days. The cultured product is centrifuged, the separated microbial cell is dried and extracted with ether, etc., in N2 stream and the ether, etc., are distilled off from the extract under reduced pressure to obtain a lipid containing a highly unsaturated fatty acid having chain of odd carbon number. The lipid is subjected to alkali decomposition with about 5wt.% NaOH at room temperature for 2-3hr and purified after extraction to obtain a 17-21C highly unsaturated fatty acid having chain of odd carbon number and containing >=3 double bonds (e.g., 5,8,11,14-nonadecatetraenoic acid). |
