PURPOSE:To prepare a venison food having unique taste and flavor and preservable over a long period, by mincing venison or a 1:1 mixture of venison and beef, adding proper amounts of lard, seasonings, etc., roasting for a prescribed period and packing in vacuum after cooling. CONSTITUTION:Venison or a 1:1 mixture of venison and beef is minced. The minced meat is added with proper amounts of lard, salt, phosphate, nutmeg, sugar, other seasonings, spices, egg, fresh cream, etc., kneaded until the mixture becomes glutinous and formed to a proper form. The formed meat is put into an oven oiled with salad oil, thoroughly dressed with salad oil, roasted over a slow fire for a prescribed time and cooled. The cooled product is packed in vacuum to obtain the objective food. |
