<p>Glyceride oils are transesterified by contacting the oil in anhydrous conditions with an alkali metal alcoholate activated by an aprotic solvent for the alcoholate. Used in prepn. of edible oils e.g. margarine oils and salad oils. Transesterification is very rapid e.g. less than 1 min at 70 degrees C in the presence of the aprotic solvent. Solid glycerides are rapidly formed during cooling, and can be separated for margarine prodn.</p> |
