The invention relates to a method for the destruction of foam, in particular in the case of methods for separating off gas from milk and delimiting amounts of milk, having a process device, which is continuously or discontinuously charged with an electrically insulating process medium which forms foam in the course of its processing treatment, and having a spatially concentrated microwave field for the dielectric heating of electrically insulating materials. By means of the proposed method it is possible to destroy foam by an effective heating of a locally narrowly restricted region without projections extending into the foam being required and without the extent of the foam being enclosed. This is achieved by process engineering by, inter alia, exposing the space above the liquid interface of the foaming process medium, including the liquid interface, to the spatially concentrated microwave field (Figure 1). <IMAGE>
