摘要 PURPOSE:To provide a fruit juice capable of utilizing dyestuffs contained in the pericarps and solid contents of fruits as the dyestuffs and maintaining the original flavor of the fruits, etc., while utilizing the residues thereof as a raw material for breakfast, by irradiating the fresh fruits with microwaves to inactivate enzymes contained in the fruits. CONSTITUTION:After pretreating processes such as the sorting and washing of fruits and the removal of stalks and cores thereof, the fruits are irradiated with microwaves having a wavelength of 915MHz or 2,450MHz by use of a microwave heating apparatus for >=1min to inactivate the enzymes of the fruits, cut and crushed with a mixer, juicer, etc., and subsequently squeezed by a cloth press method, etc., to provide the objective juice.
