PURPOSE:To surely kill or sterilize pulrefactive bacteria of TOFU (soybean curd), by uniformly heating TOFU from the interior thereof to prescribed temperature by irradiation of micro wave. CONSTITUTION:Soybean A is successively conveyed into a heating chamber 1 by a conveyer 2 while intermittently driving the conveyer 2. Then a microwave oscillator 6 is operated and microwave is irradiated through a wave guide 5 into the chamber 1. The TOFU A itself irradiated with the microwave becomes heater element by the above-mentioned irradiation and heated from the interior thereof to carry out heat sterilization in short time. Then the TOFU A after finishing heat treatment is conveyed out of the chamber 1 by the conveyer 2 and rapidly cooled to center temperature of <=40 deg.C to suppress softening of structure based on overheating. Furthermore, optimum temperature of growth of thermophilic bacteria is 50-55 deg.C. |
