摘要 PURPOSE: To obtain expansion textured animal protein suitable for use as a meat substitute by forming a wet lump by using animal powder of a low collagen content as a raw material and extruding and swelling the powder. CONSTITUTION: The amt. of the hydrolyzable collagen in the animal powder is decreased by means of bringing the animal powder into reaction with a collagen crosslinking agent or previously denaturing the collagen to gelatin and/or non-gelatin polypeptide, then washing out them out of the animal powder, etc. The animal powder decreased in the amt. of the gelatin and/or collagen is subjected to heating and pressurizing to form the wet lump. For example, the lump is extruded from an extrusion die and the pressure and temp. are decreased, by which the expanded and textured animal protein having the measurable gelatin content of <10%, more preferably about <5% of the dry solid of the product is obtd.
