PURPOSE:To prevent vascular parts from blackening, by immersing raw cod roe into an aqueous solution of nitrous acid in a specific concentration and heat-treating the cod roe under specific condition. CONSTITUTION:Raw cod roe taken from a fish body is subjected to prescribed treatment, such as washing with water, subsequently immersed in in aqueous solution of nitrous acid in 2-5% concentration and wet heat-treated at 70-120 deg.C for 10-40min. |
