PURPOSE:To obtain the title sufficiently emulsified fat and oil food, by introducing a mixture liquid consisting essentially of fats and oils, aqueous phase and cyclodextrin from two directions into a mixing chamber under a constant pressure, forming a turbulent jetting stream and then jetting the stream into a low-pressure region. CONSTITUTION:A mixture liquid consisting essentially of oils and fats, aqueous phase and cyclodextrin is jetted and introduced from an introduction hole 9 in two opposite directions (2a) and (2b) into a mixing chamber 7 under 10-800kg/cm<2> pressure to collide with the above-mentioned mixture liquid. Further, the mixture liquid is then introduced into a recessed cavity part 8 of the mixing chamber 7 to collide with the wall surface of the recessed cavity part 8 and form a turbulent jetting stream. The mixture liquid is subsequently jetted into a discharge hole 4 where is a low-pressure region and emulsified while producing turbulent jetting stream interaction and afford the aimed fat and oil food. |
