A process of milling maize by roller milling in which the moisture content of the maize fed to the roller mill is at least 23 % by weight, and preferably no more than 40 %. After tempering the maize grain to the specified moisture content the whole grain is roller milled without prior mechanical treatment. A high quality fine flour can be produced containing less than 0.5 % by weight of fibre and less than 1 % by weight of fat. |
