PURPOSE:To obtain the titled compound useful as a food flavor in high yield at a low cost by easy operations, by dehydrating a 4-hydroxy-2-alkyl-1-cyclopentanone oxidatively in the presence of a peracid. CONSTITUTION:A 4-hydroxy-2-alkyl-1-cyclopentanone of formulaI(R is 1-12C straight or branched chain alkyl, 7-8C aralkyl or 3-6C cycloalkyl) is dehydrated oxidatively in the presence of a peracid, e.g. hydrogen peroxide or perbenzoic acid, in an inert solvent, e.g. ethanol, alkaline aqueous solution or pyridine, at 0-80 deg.C, preferably 20-45 deg.C. The lactonization by the oxidation and the dehydration reactions proceed at the same time to afford the aimed compound of formula II. |
