PURPOSE:To obtain molded food which has light texture, keeps good taste of the stuff itself, and shows good appearance, by mixing pieces of an eatable stuff with a binder such as polysaccharides and/or proteins under wet conditions. CONSTITUTION:Plural pieces of eatable food stuff, preferably waste pieces of instant noodles, nuts, vegetables or their processed products, fruits or their processed products and/or fishes or their processed products are moistened, mixed with benders such as polysaccharides and/or proteins, molded, and dried to give the subject food product. Preferably, the polysaccharide as a binder is pullulan, agar, dextrin, gums, alginic acid or sodium alginate, CMC, and/or caramel, while the protein is gelatin, albumin and/or gluten. |
