PURPOSE:To continuously prepare a large amount of bean curd-like protein raw material in a short time, by continuously heating and cooling a protein paste containing soybean protein, water and a protein coagulation agent. CONSTITUTION:A protein raw material is continuously prepared by heating a protein paste containing soybean protein, water (and as necessary an oil and fat) and a protein coagulation agent with steam directly blown into the paste while preferably transferring the paste through a pipe line and cooling the heated protein paste in the course of passing through a heat-conductive pipe under turbulent flow condition. |
