PURPOSE:To prepare the titled easily eatable pasta, by immersing cooked pasta into a solution containing an organic acid to adjust the pH of the pasta, coating the surface with an edible oil, dispensing into heat-resistant containers transmitting high-frequency radiation, sealing in the container leaving a specific amount of space therein and thermally sterilizing under pressure under a specific condition. CONSTITUTION:Cooked pasta is immersed into a solution containing an organic acid (preferably citric acid) to adjust the pH of the pasta to 4.5-5.5. The surface of the treated pasta is coated with 1-5wt.% of an edible oil and the pasta is dispensed into heat-resistant containers transmitting high-frequency radiation and having an opening at the top. The upper opening is sealed with a heat- weldable film at an air-content of 100-250% and treated with a pressurized thermal sterilization apparatus at 90-110 deg.C and a gauge pressure of 0.2-2.0kg/cm<2> for 15-60min to obtain the objective pasta free from the bending and mutual adhesion of pasta and having excellent palatability and appearance. |
