PURPOSE:To produce a bagged cooked keepable food having good taste and no shape collapse by heating once, by bagging an uncooked food together with seasoning soup and heating the bagged food to carry out cooking and sterilization at the same time. CONSTITUTION:A heat-resistant and pressure-resistant bag is packed with an uncooked food and seasoning soup and sealed. Then the bag is fed to a retort pot and heated to the maximum temperature of 110-140 deg.C for 30-120min of temperature raising time. Further the temperature of the pot is maintained for 4-20min at the maximum temperature and the pot is cooled to <=70 deg.C. |
