METHOD FOR STEAMING CONFECTIONERY AND OTHER EDIBLE SUBSTANCES AND STEAMER THEREFOR

PURPOSE:To carry out uniform and good steaming of a confectionery to be steamed and other edible substances with a rising gas stream of generated steam, by placing the above-mentioned confectionery and other edible substances on carrier plates and jetting steam so as to collide with reversing plates provided thereunder. CONSTITUTION:A confectionery to be steamed and other edible substances 10 are placed on carrier plates 11 of porous plates, such as net, or solid plate materials, and contained in a hermetically sealed container. Steam 15 is then jetted from steam blow-off ports (14a) near the upper parts of side edges, i.e. bending parts (13a) of reversing plates 13 provided under the carrier plates 11 to collide with the surfaces of the reversing plates 13. Thereby the above- mentioned confectionery and edible substances 10 are uniformly and well steamed by a rising gas stream of reversed and rising stream without impairing the quality of the obtained product at all.
