PURPOSE:To enable freezing of KITAYORIGAI without damaging a taste, by boiling KITAYORIGAI, washing with cold water, cutting into fine stripes and freezing finely cut strips of KITAYORIGAI together with sea tangle and a seasoning material. CONSTITUTION:KITAYORIGAI is opened from the center, middle guts are removed and boiled by sprinkling boiling pure water containing a proper amount of salt. Then KITAYORIGAI is washed with cold water, dehydrated and cut into fine stripes. The fine strips of KITAYORIGAI is incorporated with cut sea tangle and various seasoning ingredients such as salt, rice KOJI and sugar, aged, put into cold storage in a refrigerator and frozen. Consequently, KITAYORIGAI can be frozen without damaging a taste and deliciously eaten without lowering a flavor even in long-term preservation. |
