PURPOSE:To obtain a freshness retaining agent consisting of oxide of alkaline earth metal and/or complex oxide thereof and capable of maintaining freshness of perishable food such as fruits, vegetables and mushroom over long time. CONSTITUTION:The aimed retaining agent consisting of oxide of alkali (earth) metal which is preferably magnesium oxide or calcium oxide and/or complex oxide thereof and containing 1-99% of the above-mentioned ingredient as an essential ingredient and containing 10-99% gas absorbent and/or 1-90% water absorbing agent as an auxiliary agent.
