An appts. for the removal of bacteria (sterilisation) from cocoa comprises a pressure vessel having its internal walls free of projections and mounted on a pref. horizontal axis of rotation, so that the contents can be thoroughly mixed without any internal mixer blades or projections. The vessel is pref. asymmetrical about the axis, but may be rotationally symmtrical about an axis transverse to the rotational axis; in particular it is pear-shaped. The supporting shaft or trunnions is pref. hollow, at least one half-shaft being used as a steam inlet in addition to a steam inlet at the end of the vessel.
