PURPOSE:To obtain the titled composition providing the same effects with a small amount used, having excellent enzyme safety and enzymatic activity, by adding a given amount of a monohydric alcohol, an organic solvent or di- or more hydric polyol to pyruvate oxidase. CONSTITUTION:Pyruvate oxidase produced by Lactobacillus sp. TE-6103 strain (FERM P-8886) is blended with 0.1-50w/v% monohydric alcohol (e.g. methanol), organic solvent (e.g. acetone) or di- or more hydric polyol (e.g. ethylene glycol).
