PURPOSE:To obtain the titled powder harmless as a food additive, free from moisture-absorption and agglomeration when left in air over a long period during storage or after opening the seal in use and resistant to degradation of the taste, flavor, color, etc., by subjecting a starchy raw material to a specific treatment and using the treated material as an essential component. CONSTITUTION:The objective powder having stable solubility and handleability and resistant to oxidation and browning is produced by using a gelatinized starchy raw material having an apparent specific gravity of 0.6-0.18, a gelatinization degree of >=70% and a water-content of <=12%. The powder is e.g. powdery soy sauce, powder of hydrolyzed protein, amino acid, table salt, potassium chloride, ammonium chloride saccharides, organic acid, natural extract, species, other food powder or a composition composed mainly of the above components. |
