PURPOSE:To obtain a dried sweetfish having a certain unique taste and flavor, by adding intestinal materials of a bonito to SAKE (Japanese rice wine) containing added 'MIRIN' (sweet SAKE) added thereto, heating the resultant blend, straining the intestinal materials, dipping a sweetfish after removing viscera in the obtained broth, taking out the sweetfish from the broth and drying the sweetfish in the shade. CONSTITUTION:The aimed sweetfish, obtained by adding intestinal materials of a bonito to SAKE (Japanese rice wine) containing 'MIRIN' (sweet SAKE) added thereto, heating the resultant blend, straining the intestinal materials to prepare a broth, then taking out viscera from a sweetfish, washing the sweetfish with water, dipping the washed sweetfish in the above-mentioned broth for about 1hr, subsequently taking the sweetfish out of the broth, piercing the sweetfish with a metallic skewer and subsequently drying the skewered sweetfish in the shade of a cool place for a whole day and night and preservable for a long period. |
